Short biography and experience
He deals with all aspects of meat science but focusing more on meat quality indicators, technology of meat processing, meat products and innovations in traditional recipes. He is an expert on nutritional, hygienic and sensory quality characteristics of meat and meat products. Currently, he is the head of the Department of Food Technology and the coordinator of the Meat Pilot Plant at the Mendel University in Brno with main focus on meat processing, but also on other commodities of animal and plant origin.
